The ubiquitous cutlet is a popular snack. Best eaten with some mint chutney and washed down with a cup of hot masala chai or filter coffee, cutlets are pretty easy to make as well. The upside? Cutlets can double up as burger patties too!

Basically, a cutlet patty is fried on a skillet with some oil. As a typical Indian, I swear by coriander chutney or tamarind chutney to go with cutlets. But when you don’t really have the time to whip up chutneys, tomato ketchup works just as good. I’m drooling already, so let’s check out a few cutlet recipes you can try at home.

1.Paneer Cutlet
Just half an hour to go before guests arrive and have no snacks to offer? Worry not; this spicy paneer cutlet recipe can be your savior.

Ingredients:

  • Crumbled paneer – 250 grams
  • Bread slices – 2
  • Ginger garlic paste – 1 tablespoon
  • Onion (finely chopped) – 1
  • Green chilies (finely chopped) – 2
  • Turmeric powder – ½ teaspoon
  • Pepper powder – ½ teaspoon
  • Mint leaves (finely chopped) – 2 tablespoons
  • Breadcrumbs (for coating) – 1 cup
  • All-purpose flour – 2 tablespoons
  • Cooking oil – 3 tablespoons
  • Water – 1 cup
  • Salt (as per taste)

Method:

  1. Place the bread slices in water (for a minute). Squeeze out the excess water.
  2. Mix the wet bread slices, paneer, ginger garlic paste, onion, green chilies, turmeric powder, pepper powder, salt, and mint leaves in a bowl.
  3. Roll the mixture into average-sized balls. Flatten them out into the shape of a patty.
  4. In a bowl, mix the flour with 4 tablespoons of water. Once this batter is formed, dip the cutlets in it.
  5. Now, roll the cutlets in the breadcrumbs till all sides are coated.
  6. Heat oil in a skillet. Fry the cutlets (3-4 minutes) on medium flame, till crispy and brown on all sides.
2.Potato & Peas Cutlet

Nothing like the combination of potatoes and peas! Filling and yummy, what more do can you need?

Ingredients:

  • Boiled potatoes – 8-10
  • Frozen green peas – ½ cup
  • Onions (finely chopped) – 2
  • Green chilies (finely chopped) – 3-4
  • Garlic pods (minced) – 2-3
  • Ginger piece (finely chopped) – ½
  • Turmeric powder – 2 teaspoons
  • Red chili powder – 1 tablespoon
  • Garam masala – 1 teaspoon
  • Cumin seeds – ½ teaspoon
  • Bay leaf – 1
  • Cooking oil – 1 cup
  • Salt (as per taste)

Method:

  1. Peel the boiled potatoes and mash them.
  2. Heat 1 teaspoon cooking oil in a skillet. Add cumin seeds and bay leaf. Mix in onions, ginger, garlic, green peas, and green chilies.
  3. Sauté on medium flame for 2 minutes. Add salt and garam masala.
  4. Now, add the mashed potatoes. Mix well to ensure the potatoes absorb all the masala.
  5. Take the skillet off flame. Roll the mixture into cutlet-shaped patties.
  6. On another burner, heat a griddle on high flame. Spread oil on the griddle and place the cutlets in it.
  7. Fry on medium flame for about 3-4 minutes; until brown and crispy on all sides.
3.Chicken Cutlet

Ingredients:

  • Boneless chicken – ½ kg
  • Big onion (finely chopped) – 1
  • Finely chopped ginger – 1 tablespoon
  • Green chilies (finely chopped) – 2-3
  • Potato (boiled & mashed) – 1
  • Garam masala – 1 teaspoon
  • Breadcrumbs – 1 cup
  • Egg whites – 1-2
  • Curry leaves
  • Oil (for frying)
  • Salt (as per taste)

Method:

  1. Mince the chicken and boil it.
  2. In a skillet, sauté the onion till it is soft and brown. Add ginger, green chilies, curry leaves and the minced chicken. Mix well.
  3. Add salt, garam masala, and pepper powder. Stir for 5 minutes. Take skillet off the burner.
  4. Once the mixture is cool, add mashed potatoes to it and mix well.
  5. Make cutlet-shaped patties. Dip it in the egg white, and then the breadcrumbs.
  6. Deep fry in oil till golden brown and crispy on all sides.
